Glen Shiel Gastro Hunting is all about field to fork fine food and wild hunting. Our tight team have a single goal – to provide a fantastic experience within the wild mountains, including luxurious fine dining and a fun time in our lovely, traditional lodge.
William Alldis: As owner and founder of Gastro Hunting, he is a well known game chef and countryman, with equal passion for conservation and hunting in wild places. William fell in love with Glen Shiel in January 2020 and has been working ever since to make this dream a reality.
James Brandon: Co-founder and close friend of William. James grew up between the East End markets and the Essex countryside. This along with him being an accomplished horseman, lover of good food and the outdoors made him an obvious choice as a business partner with William.
Colin Campbell: Our Head Stalker, who’s family have been tenant farmers and head stalkers on the estate for over 150 years. His knowledge of the hills and mountains in Glen Shiel, and the deer that live there, is unmatched, as is his company on the hill and in the larder after a hard drag home.
The rest of our tight-knit team include Scotty, our jovial and knowledgable Under Stalker, who is always up for a good laugh. Alison, our fantastic House Keeper, who’s brain is like a Scottish Yellow Pages. No request is too much and she knows everyone and how to get anything within the Highlands. Last, but by know means least, is Lorna, James’ much better half who controls the diary, the accounts and keeps us all in the right places at the right time. Without her we would all be lost.

Our chefs thrive with wild food ingredients and serve up some of the finest meals our guests have ever had.
Our experiences are fully catered for and include full breakfasts, a light lunch (for the hill or within the lodge), a 3 course meal for dinner and the finest, complimenting drinks.
